Creamy Cheese Spinach Soup
Serves 2-3
This soup is so creamy and delicious, ๐ super Yummy!
Ingredients
3 1/2 tbsp olive oil
2 medium onion, finely chopped
2 garlic cloves, chopped
finely chopped 1 medium potato, peeled and chopped into chunks
(600ml) chicken stock
4tblspoon Cream Cheese
1 slice Cheese
(450g) fresh spinach, washed and roughly choppedfinely
Pinch Salt to taste ๐
Black pepper optional
Instructions
Cook the garlic and onion in the olive oil in a large saucepan which has a lid. Fry for 5-6 minutes until softened. Stir in the potato and continue to cook for another minute.Pour in the stock and simmer for 8-10 minutes, or until the potato has started to soften.Pour in the chicken stock bring back up to a simmer and then stir in half of the spinach , Cream cheese & 1slice cheese
Cover and simmer for around 15 minutes.
Allow to cool for 5-10 minutes before pouring into a blender. Add the remaining spinach and blend until smooth.Return to the original pan and reheat, seasoning with a little salt, pepper and taste.
Ladle into bowls and Ready to serve.
